1: Bring a large pot of water to a boil, then add a generous amount of salt and cook noodles 1 minute less than package instructions; reserve 1 cup pasta water. 2: Add pancetta to a skillet over medium heat (no oil required) and cook, stirring until nicely charred, about 4-5 minutes, then remove from heat. 3: In a medium bowl, whisk together the eggs, cheese, and pepper. 4: Once noodles are cooked, add them to the skillet with pancetta (make sure heat is off) and add the egg mixture and 1/3 cup pasta water, stirring quickly to ensure noodles are coated with the sauce (add more pasta water if needed). 5: Serve immediately and enjoy; adding extra pepper and chili flakes is recommended.View original recipe
