cup red onion

cup cucumber

tsp honey

cup quinoa

cup olive oil

tsp salt

tbsp red wine vinegar

tsp pepper
Instructions
1: Add quinoa & 1.5 cups of water to a small saucepan, bring to a boil, then cover & let simmer on low for 15 minutes. 2: Remove from heat, fluff with a fork & let cool. 3: Dice veggies & whisk together dressing. 4: In a large bowl combine quinoa, veggies, feta & toss with dressing. 5: Serve or divide into containers & store in the fridge for up to 4 days.View original recipe
