Greek Chicken Skewers

Delicious Greek-inspired chicken skewers marinated to ensure juiciness, paired with veggies and served with tzatziki and roasted potatoes.

What you need

cup olive oil

cup greek yogurt
lemon

garlic clove

tsp salt

tsp pepper

tsp oregano

green bell pepper

red bell pepper

red onion

tbsp olive oil

tsp salt

tsp pepper
Instructions
1: Pat dry chicken & dice into cubes. 2: Add chicken to a glass dish with a lid & add the remainder of ingredients. 3: Close the container and shake really well until each chicken piece is coated. 4: Place in the fridge for a minimum of 30 mins or up to 12 hrs. 5: Cut veggies into similar size as chicken. 6: If using wooden skewers, soak them for at least 20 minutes in water before loading them up. 7: Assemble skewers alternating between chicken & veggies. 8: Grill on the BBQ, frying pan or griddle, about 5 mins per side (rotating) until chicken has cooked through (option to check using a meat thermometer - temp of 165 F). 9: Serve with tzatziki for dipping & potatoes.View original recipe
