Butternut Squash Feta & Sausage Pasta

A perfect fall dinner featuring roasted butternut squash, feta, and your favorite sausage, blended into a creamy sauce and served with short noodles. cooked noodles
cup pasta water

cup non-dairy creamer
Instructions
1: Preheat oven to 400°F. 2: Cut butternut squash in half and scoop out seeds. 3: Place in a large baking dish with feta and garlic (cut top off, leave peel on!). 4: Drizzle with olive oil and spices. 5: Bake for 50 minutes. 6: Cook noodles and reserve pasta water. 7: Remove sausage from casings and cook, crumbling it for 6 minutes until no longer pink. 8: Remove squash from peel and add to blender, squeeze garlic out, add feta, pasta water and milk/cream. 9: Blend until smooth. 10: In a large serving dish, combine noodles, sausage and top with sauce.View original recipe
