A colorful and nutritious roasted beet orzo salad perfect for a filling lunch or as a side dish. This salad features roasted beets, kale, cooked orzo, diced chicken, pumpkin seeds, and crumbled goat cheese, all combined with a delicious Honey Dijon dressing.

tbsp olive oil

tbsp vinegar

cup cooked orzo

tbsp honey

cup pumpkin seeds

tsp salt

Instructions
1: Preheat oven to 400°F. 2: Scrub beets, cut tops off & rub with oil, salt & pepper. 3: Wrap beets with tinfoil & bake for 50 minutes. 4: Wash, dry & finely chop kale. 5: Add kale to a large bowl with a drizzle of oil & sprinkle of sea salt. 6: Massage kale for 5 minutes. 7: Chop chicken & prep your orzo. 8: Once beets are done roasting & have cooled, peel the skin and cut into cubes. 9: Assemble the salad starting with kale, beets, orzo, goat cheese, and pumpkin seeds. 10: Whisk together the dressing ingredients and toss the salad.View original recipe
