Cheesy Spinach and Artichoke Shells

A comforting dinner featuring large pasta shells stuffed with a flavorful mixture of spinach, artichokes, and cheeses. This dish can be prepared ahead of time and is perfect for family meals or special occasions like Mother's Day.

What you need

oz spinach

can artichoke hearts

oz skim milk ricotta
egg

cup shredded mozzarella

cup grated parmesan cheese

tsp italian seasoning

tsp salt

tsp pepper

marinara sauce
Instructions
1: Add water to a large pot & bring to a boil. 2: Finely chop spinach & artichokes. 3: Add a splash of olive oil to a large skillet on medium heat, once warm add spinach and artichokes, Italian seasoning, salt & pepper. Cook for 5-8 minutes. 4: Remove spinach and artichokes from heat and let cool for a few minutes. 5: Add salt to the boiling water & pasta shells. Cook 1 minute less than package instructions. 6: Drain noodles & add them to a large lined baking sheet or baking dish. 7: Preheat oven to 350 (or skip if you’re making this ahead of time). 8: In a large bowl combine ricotta, egg, half of the Parmesan and half of the mozzarella cheese. 9: Fold in the spinach mixture & mix well. 10: Stuff each shell with mixture & top with marinara. 11: Add remaining parmesan and mozzarella cheese on top. 12: Bake at 350 for 20 minutes.View original recipe
