What you need

oz diced tomatoes with green chilies

taco seasoning

onion

bell pepper

cup quinoa
cup broth

cup shredded cheddar

green onion
Instructions
1: Add a splash of olive oil to a large skillet & add onions and peppers. Cook stirring until veggies are soft (5 mins). 2: Add ground turkey & cook until no longer pink. 3: Add taco seasoning and stir everything. 4: Add quinoa, diced tomatoes & broth. 5: Stir, cover & let simmer for 15 mins. 6: Top with cheese & put the lid back on until the cheese has melted, sprinkle with green onion. 7: Option to serve with avocado & yogurt.View original recipe
