Instructions
1: Cut 4 peppers and discard seeds. 2: Boil peppers in a large pot for 3 minutes, then drain and set aside. 3: Cook rice as per package instructions. 4: Sauté 1/2 onion and 1 diced jalapeño (optional). 5: Combine 2 cups cooked rice, onion mixture, 1 can of drained black beans, 1 can of diced tomatoes, 2 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp garlic powder, and sprinkle with salt and pepper. 6: Top with shredded cheddar cheese. 7: Bake at 350°F for 25 minutes. 8: Serve with salsa.View original recipe
