Chicken & Potato BBQ Bowls

A quick and easy chicken and potato BBQ bowl that's perfect for summer. Enjoy the delicious flavors of seasoned potatoes, rotisserie chicken, and coleslaw, all topped with your favorite BBQ sauce.

tsp pepper

tsp paprika

tsp garlic powder

rotisserie chicken

cup bbq sauce

coleslaw dressing

salad dressing

cup frozen corn

jalapeno
Instructions
1: Quarter potatoes & add to a medium pot, fill with water & bring to a boil, let boil for 10 mins. 2: Preheat oven to 425°F. 3: Drain potatoes & spread on a large baking dish lined with parchment paper. 4: Drizzle with olive oil and seasonings, toss well. 5: Bake for 35 mins & broil for 2 mins. 6: Add coleslaw to a bowl and toss with dressing. 7: Sauté frozen corn in a little olive oil and sprinkle of salt until nicely charred (~5 minutes). 8: Set corn aside and add chicken to the same pan with BBQ sauce, let simmer for 5 minutes. 9: Assemble bowls with coleslaw, chicken, potatoes, corn & jalapeños.View original recipe
