Sweet Potato Chili Fries

Instructions
1: Preheat oven to 425°F. 2: Peel & slice 1-2 sweet potatoes, toss with oil, salt, pepper & paprika. 3: Bake sweet potatoes for 30 minutes. 4: Sauté 1/2 onion, 1 chopped bell pepper, and 1 chili pepper in olive oil. 5: Add 1 tsp taco seasoning, salt, and pepper; then remove from heat. 6: Add ground beef and cook until brown, then drain excess fat. 7: Add sautéed veggies back to the pan with 2 tsp taco seasoning, 1.5 tbsp tomato paste, 1/3 cup broth, 1/3 cup corn, and 1/3 cup black beans; simmer for 5-8 minutes. 8: Assemble by layering sweet potato fries and taco beef. 9: Top with shredded cheddar, avocado, cilantro, and green onions.
