Tofu Udon Noodle Stir Fry

A delicious and easy-to-cook Udon noodle stir fry with crispy air-fried tofu and an array of fresh vegetables, perfect for a Meatless Monday dinner. The dish comes together quickly thanks to prepped veggies and a flavorful sauce made with tamari, rice vinegar, and spices.

What you need
tsp chili flakes

tsp hot sauce

snow peas

tbsp coconut sugar

extra firm tofu

broccoli

tsp sesame oil

green onion

tbsp rice vinegar

tsp ground ginger

Instructions
1: Press tofu by placing it on a plate between 2 pieces of paper towel; add a heavy pot or cast iron on top & let sit for 20 minutes. 2: Cut tofu into cubes, toss in a bowl with tamari, sesame oil, salt & pepper. 3: Air fry the tofu (spray with olive oil) for 15 minutes, shaking halfway through. 4: Whisk together sauce ingredients. 5: Add a splash of oil to a large frying pan & add veggies, cooking & stirring for 5 minutes. 6: Add noodles & top with sauce. 7: Cover with a lid and let the noodles 'relax' for 4 minutes. 8: Remove lid & stir everything until well incorporated; if noodles aren’t coming apart, add a splash of vegetable broth or more tamari & let cook for another couple of minutes. 9: Remove from heat & stir in tofu. 10: Sprinkle with green onion.View original recipe
