Two easy, healthy, vegetarian meal ideas featuring rice and beans. Perfect for busy times with quick preparation. The first is a stir fry with veggies and sauce, and the second is a burrito bowl with sautéed vegetables and avocado.

What you need

red bell pepper
EVOO

cup rice

salt

spinach

tsp chili powder

broccoli florets
cup broth

can black beans
Instructions
1: Cook the rice with 1 cup of rice and 1.5 cups of broth by boiling and then simmering with the lid on for 15 minutes. 2: Sauté 1/2 small diced onion until translucent. 3: Add 1 can of rinsed and drained black beans, 2 minced garlic cloves, 1 teaspoon of chili powder, salt, and pepper to the onion. 4: Pour in another 1 cup of broth and simmer, stirring for 15 minutes. 5: Sauté chopped red bell pepper and broccoli florets in EVOO with salt and pepper. Optionally add 2 handfuls of spinach at the end. 6: For the stir fry, heat the rice, beans, and veggies in a frying pan, drizzling with coconut aminos or tamari/soy sauce and hot sauce. 7: For the burrito bowl, serve rice and beans with sautéed veggies, avocado, and a drizzle of salsa verde.View original recipe
