Roasted Pepper Hummus Pasta

box cooked noodles

Instructions
1: Cut peppers in half lengthwise and scoop out seeds. Place on a baking sheet lined with aluminum paper. 2: Broil on high for 10 minutes. 3: Remove from the oven and cover with aluminum paper to allow the peppers to steam for 25 minutes. 4: Meanwhile, dice the onion and garlic. 5: Sauté with olive oil and Italian seasoning for 5 minutes until soft. 6: Open the aluminum foil and remove the skins from the peppers. 7: Add peppers, onion, garlic to a blender, add almond milk, and blend until smooth. 8: Pour back into a skillet and stir in hummus. 9: Cook pasta according to package directions, drain, and add to the sauce. 10: Serve as is or top with feta, parsley, and chili flakes.View original recipe
