1: In a food processor, combine flour, salt, and coconut sugar; pulse. 2: Slice vegan butter and add to the flour mixture; pulse 8 times. 3: Add ice water, pulsing between each tablespoon until a dough forms. 4: Remove dough and place on a floured surface; shape it into a disc. 5: Wrap the dough in saran wrap and refrigerate for 1 hour. 6: In a large bowl, combine sliced peaches with coconut sugar, flour, and vanilla. 7: Divide the dough into 4 pieces and roll each out into circles. 8: Arrange peach slices in the center of each circle and fold over the edges. 9: Brush with melted coconut oil or regular egg wash. 10: Bake for 15 minutes, then broil for 2 minutes until golden.View original recipe
