Instructions
1: Season shrimp with paprika, garlic powder, salt, and pepper. Pan fry in hot avocado oil for 2 minutes per side until crispy. 2: Cook corn and cut niblets off the cob. Dice tomato, avocado, lettuce, and any fresh veggies. 3: Assemble salads and toss with dressing or oil and vinegar. 4: Remove corn from the cob using a sharp knife for fritters. 5: Finely dice red pepper, jalapeño, and cilantro and combine with corn in a bowl. 6: Add almond milk and whisked eggs to the vegetable mixture. 7: Mix in flour, salt, and pepper until well incorporated. 8: Add batter to a hot greased skillet and cook for 3 minutes per side until done. 9: For Mexican street corn dip, cut corn off the cob and prepare veggies. 10: Heat olive oil in a large skillet, add corn, and season.
