Instructions
1: Sauté 1 diced jalapeño, 2 minced garlic cloves, and 1 inch minced ginger in EVOO. 2: Add 4-6 tablespoons of green curry paste, cooking for a minute. 3: Add 1 sliced small onion and 1 sliced red bell pepper; cook for another 4 minutes. 4: Add 1 can of coconut milk, 1 cup of broth, and 2 raw chicken breasts thinly sliced. 5: Stir and cover, then simmer for 12 minutes. 6: Add broccoli florets and a handful of snap peas, cook while stirring for 5 more minutes. 7: Serve over rice or cauliflower rice, and sprinkle with sea salt, pepper, and chili flakes if desired.View original recipe
