What you need

tsp cinnamon

pinch salt

onion

qt vegetable broth

cup spinach

tbsp curry powder

cup red lentils
pinch chili flakes

tsp cumin

pinch pepper

cup carrot
can fresh tomatoes

oz vegan buttery spread
Instructions
1: Add vegan butter to a large pot or Dutch oven and melt it. 2: Add onion and cook for 4 minutes. 3: Add spices (curry powder, cumin, cinnamon, salt, pepper, and chili flakes) and let cook for another minute. 4: Add diced carrots and continue cooking until they are soft, about 3 minutes. 5: Add red lentils, diced tomatoes with juices, coconut milk, and vegetable broth. 6: Let simmer for 20 minutes covered. 7: Stir in chopped spinach and cook until wilted.View original recipe
