What you need

tbsp curry powder

tsp ginger

tsp paprika

tsp salt

Instructions
1: Pat dry chicken, trim any extra fat (optional) and dice into small pieces. 2: Dice onion & garlic. 3: Wash and chop carrots and broccoli. 4: Add chicken to a bowl & coat with spices, option to let marinate for a bit in the fridge (or not). 5: Add a splash of avocado or coconut oil to a large skillet. 6: Add onion and carrot, cook for 5 minutes. 7: Add garlic & spiced chicken, mix and cook for an additional minute. 8: Add coconut milk & broth, stir & cover simmering for 15 minutes until chicken is cooked. 9: Remove lid and add broccoli and splash of soy or fish sauce. 10: Let cook for another 4 minutes until broccoli is tender. 11: Serve over rice and/or with naan.View original recipe
