Veggie Egg Bites

These veggie egg bites are perfect for a busy on-the-go breakfast. They're made with a mix of sautéed vegetables, eggs, and cheese, making for a healthy meal prep idea as you head back to the office. You can use any veggies you like, but this particular combination of bell pepper, zucchini, hot pepper, and kale is especially tasty. Bake them in a muffin tin and enjoy them hot or with your favorite hot sauce!

Instructions
1: Preheat the oven to 375°F. 2: Chop and sauté 1 bell pepper, 1 zucchini, and 1 hot pepper (optional) in olive oil for 4 minutes. 3: After 4 minutes, add 2 cups chopped kale and cook for another 2 minutes. 4: Remove from heat. 5: In a large bowl, whisk together 9 eggs, 1/4 cup almond milk, 1/2 teaspoon garlic powder, salt, and pepper. 6: Scoop the veggie mixture into a well-greased muffin tin and top with the egg mixture until about 3/4 full. 7: Sprinkle with green onions and shredded cheddar. 8: Bake for 20 minutes. 9: Serve hot with hot sauce if desired.View original recipe
