red onion

head romaine lettuce

tbsp italian seasoning

cucumber

fl oz olive oil

cup quinoa

cup feta

kalamata olive

bunch cherry tomato

Instructions
1: Cook quinoa according to package instructions. 2: Rinse and drain chickpeas. 3: Add olive oil to a small saucepan; once hot, add chickpeas & Italian seasoning, salt & pepper. 4: Cook, stirring, until they get crispy (~5 mins). 5: Dice all veggies. 6: Assemble bowls starting with 2-3 heaping tbsp of tzatziki, quinoa, chickpeas, tomatoes, cucumber, red onion, feta. 7: Drizzle with olive oil. 8: Top with lettuce. 9: Store for up to 4 days.View original recipe
