What you need

tsp paprika

cup sharp cheddar

cup cottage cheese

cup butter

tbsp mayo

tsp salt

tsp pepper

russet potato

slice bacon

cup corn
Instructions
1: Preheat oven to 415°F. 2: Scrub potatoes, rub with oil & salt, poke holes & bake for 50 minutes (flip halfway through). 3: Cook bacon until crispy & dice. 4: Let potatoes cool for a few minutes, slice in half lengthwise & carefully scoop out the insides. 5: In a medium bowl combine potato, butter, mayo, cottage cheese, bacon, corn, spices & half the cheddar cheese. 6: Mix until mixture is creamy & smooth. 7: Reduce oven temperature to 350°F. 8: Place potato skins into a baking dish & stuff with potato filling. 9: Top with remaining cheddar cheese. 10: Bake for 15 minutes. 11: Option to garnish with green onion.View original recipe
