Instructions
1: Pat dry chicken, cut into small pieces, place in a bowl and toss with flour, salt & pepper. 2: Heat a large skillet and add avocado oil; once hot add chicken and cook for 4 minutes per side, avoiding overcrowding and cooking in batches if necessary. 3: Remove chicken and set aside. 4: Add onion and another splash of oil, cook for 4 minutes stirring. 5: Add garlic, Italian seasoning, and chili flakes, cook for another minute. 6: Add broth and deglaze by scraping the bottom of the pan. 7: Add cherry tomatoes and cook for 3 more minutes. 8: Add coconut milk, chicken, and spinach; let cook for 5 minutes. 9: Remove from heat, season with salt & pepper and enjoy!View original recipe
