Instructions
1: Boil potatoes until soft, then drain and mash with mayonnaise, almond milk, salt, and pepper. 2: In a bowl, combine ground turkey with finely chopped onion, egg, panko, thyme, sage, garlic powder, salt, pepper, and cayenne. 3: Roll the mixture into small meatballs and bake at 400°F for 18 minutes. 4: Cut squash lengthwise, remove seeds, slice, and toss with oil, salt, and pepper; bake for 35 minutes until crispy, or pan fry in oil on high if pressed for time. 5: For the gravy, slow cook thinly sliced onion in oil for 20 minutes, then add broth, smashed garlic cloves, and thyme sprigs, simmer for 15 minutes, blend, and serve over mashed potatoes and meatballs.View original recipe
