What you need

oz diced tomatoes with green chilies

taco seasoning

onion

bell pepper

cup quinoa
cup broth

cup shredded cheese

Instructions
1: Add peppers & onions to a skillet over medium heat with 1 tbsp olive oil & cook until soft (around 5 mins). If using frozen, add to a skillet over medium heat with a splash of water & cook until soft. 2: Push veggies to the side & add ground turkey. Cook until no longer pink breaking it up with a spatula. If there’s a lot of excess water, drain it once the turkey is cooked. 3: Add taco seasoning and stir everything well. 4: Add quinoa, diced tomatoes & broth. 5: Stir, cover & let simmer for 20 mins. 6: Top with cheese & put the lid back on until the cheese has melted. 7: Option to serve with green onion, avocado & yogurt.View original recipe
