Smashed Potato Nachos

Delicious smashed potato nachos made with leftover beef and a variety of vegetables. These comforting nachos are versatile and made with whole foods, perfect for sharing or enjoying as a meal. The beef is seasoned with taco spices, layered with crunchy vegetables, and topped with cheese, making them a satisfying dish any time of the year, especially with potatoes in season!

What you need

lb ground beef

tbsp taco seasoning

cup shredded cheese

cup corn

cup red onion

cup bell pepper

avocado
salsa

green onion
Instructions
1: Preheat oven to 425°F. 2: Add potatoes to a medium pot, fill with water, bring to a boil & boil for 10 mins. 3: Drain and spread on a lined baking sheet with parchment paper. 4: Using the bottom of a glass, press down (smash) each potato until it’s very thin. 5: Rub with lots of olive oil & season with salt and pepper. 6: Bake for 25-30 minutes (check on them!). 7: Meanwhile cook your ground beef, once no longer pink add taco seasoning and 1/4 cup water, let it simmer for 10 mins. 8: Chop your onion, pepper, corn & avocado. 9: Remove potatoes from the oven, top with beef, veggies & cheese, place back in the oven for 5 mins. 10: Remove and top with avocado and salsa. 11: Serve and enjoy!View original recipe
