A dreamy shrimp scampi pasta dish that is fancy-ish yet super simple and cozy. It includes shrimp, garlic, lemon juice, and parsley, all combined in a creamy sauce with spaghetti. Ideal for a delightful dinner with optional dairy-free butter.
Bring a large pot of water to a boil.
Finely dice garlic and parsley, and juice your lemon.
Pat dry shrimp WELL, especially if defrosting.
Cook spaghetti until al dente and reserve 1/2 cup of pasta water.
Sauté minced garlic and chili flakes in oil and 2 tbsp butter, stirring often.
Add shrimp and cook for 2 minutes per side, spreading them out as much as possible.
Add 1/2 cup dry white wine or broth and lemon juice; let simmer for a couple of minutes.
Add parsley and remaining 1 tbsp of butter.
Remove from heat and stir in spaghetti along with a little reserved pasta water until desired creamy consistency is reached.
Enjoy with extra chili flakes and parsley; garlic bread is optional but highly recommended.
