A super simple one-pot weeknight meal loaded with veggies and shrimp, which can be swapped for your choice of protein. This flavorful dish includes red and green bell peppers, jalapeño, onion, rice, broth, and taco seasoning, making it both nutritious and delicious.

white onion

cup rice
cup broth

cup water

tbsp taco seasoning

lb shrimp
Instructions
1: Pat dry shrimp & season with salt, pepper & garlic powder. 2: Add avocado oil to a hot skillet, cook shrimp 2 mins per side & at the end sprinkle with taco seasoning. 3: Remove shrimp & set aside. 4: Dice veggies & add to pan with taco seasoning. 5: Cook for 5 mins until veggies are soft. 6: Add rice, broth & water. 7: Cover and simmer for 15 mins. 8: Remove lid, stir & return shrimp to pan. 9: Option to serve with salsa, avocados, hot sauce etc.View original recipe
