Instructions
1: Heat olive oil in a deep pan or pot. 2: Once hot, add onion and cook for 5 minutes. 3: Add garlic, ginger, and spices; cook for another 3 minutes. 4: Add lentils, tomatoes, water, sprinkle of salt, pepper, and bay leaves. 5: Cover and let simmer for 25 minutes, stirring occasionally. 6: Remove from heat; in a small saucepan, add olive oil and cumin/fennel seeds, and toast for a few minutes. 7: Divide into bowls, top with the olive oil and seed mixture, and lots of fresh parsley or cilantro. 8: Serve over rice or with naan.View original recipe
