Nalesnyky, traditional Ukrainian crepes, can be enjoyed sweet or savoury. This recipe combines flour, almond milk, and eggs for the batter, and a filling made with cottage cheese, egg yolks, and vanilla. Perfect for cooking together with loved ones!

What you need

cup almond milk

egg nog

cup soda water

tsp salt

tbsp sugar
tbsp oil

cottage cheese

egg yolk

tsp vanilla

cup sugar
Instructions
1: Combine batter ingredients by adding flour, salt & sugar to a large bowl. 2: Whisk together eggs & add milk & soda water. 3: Add wet to dry and stir until smooth & no clumps are seen. 4: Set aside and work on your filling. 5: Add cottage cheese to a food processor & pulse. 6: Add vanilla, sugar & egg yolks, pulse again until smooth. 7: Start making crepes by heating a flat pan & rubbing with oil. 8: Add half a cup of batter & swirl around in the pan; flip after a few minutes and cook another 1-2 minutes. 9: Repeat until all batter is used up & continue to grease the pan in between. 10: Spread filling & roll up each crepe. 11: Preheat oven to 350°F and grease a large cooking dish with butter. 12: Add rolled crepes & rub tops with butter; cook for 15-20 mins. 13: Enjoy as is or with a simple strawberry & yogurt combo.View original recipe
