Instructions
1: Cook quinoa according to package instructions & let cool (to expedite this, place in the fridge!). 2: Dice onion, cucumber, mint, parsley & pistachios. 3: Whisk together dressing ingredients. 4: In a large bowl add dressing to the bottom, quinoa, and remainder of ingredients. 5: Toss well. 6: Divide into 4 containers and store in the fridge for up to 4 days.View original recipe
