Mexican Street Corn Dip

1: Cut the corn off the cob using a sharp knife.

2: Dice red onion, jalapeño, and cilantro.

3: In a large skillet, heat olive oil and add corn.

4: Season with smoked paprika, cayenne, salt, and pepper.

5: Cook, stirring for 10 minutes until the corn starts to caramelize.

6: Transfer to a bowl and let cool for 10 minutes.

7: Add the remaining ingredients and toss well.

8: Serve with chips.
