red onion

lettuce

cup feta

cup extra-virgin olive oil

tbsp balsamic vinegar

tbsp maple syrup

tbsp dijon mustard

tsp salt

tsp pepper
Instructions
1: Add quinoa and water to a small saucepan, bring to a boil, cover and simmer for 15 minutes. 2: Add chicken burgers to a skillet over medium heat and cook 3 minutes on each side. 3: Cut the burgers into 1 inch squares and set aside. 4: Wash and chop lettuce, cucumbers, tomatoes, and red onion. 5: Whisk together dressing ingredients. 6: Start assembling by adding dressing to the bottom of each container. 7: Follow with quinoa and the chicken burger pieces. 8: Top with feta and veggies. 9: Place lettuce on the very top and don’t shake until you’re ready to eat. 10: Store in the fridge for up to 4 days.View original recipe
