What you need

cup carrot

cup celery

clove garlic
lemon

cup spinach

cup parsley
cup penne noodles
chicken breast

cup water

can coconut milk

tsp turmeric

tsp salt

tsp pepper
tsp chili flakes
Instructions
1: Press sauté on your instant pot & once hot add a drizzle of olive oil OR add oil to a hot pot. 2: Add onion, carrot & celery and cook stirring for 4 mins. 3: Add garlic and spices, cooking for another minute. 4: Hit cancel and add chicken breasts (cut each one in half lengthwise) & water. 5: Pressure cook for 15 + naturally release for 10 (or cover your regular pot and simmer for 25 mins). 6: Remove chicken & shred. 7: Add chicken back to pot, pasta, coconut milk, and lemon juice. 8: Hit sauté again and let simmer for 5 mins until noodles are cooked. 9: Hit cancel & serve with fresh parsley and/or extra lemon juice.View original recipe
