What you need

cup unsweetened shredded coconut

cup unsalted pistachios

cup unsalted pumpkin seeds

cup roasted nuts

tbsp chia seed

tsp fine sea salt

cup olive oil

cup honey

tsp vanilla
Instructions
1: Preheat oven to 250°F. 2: Combine dry ingredients: rolled oats, shredded coconut, almonds, pumpkin seeds, chia seeds, and sea salt. 3: In a small saucepan, bring honey and oil to a boil; remove from heat and stir in vanilla. 4: Combine wet and dry ingredients. 5: Spread mixture on a large baking sheet lined with parchment paper (or divide into 2). 6: Bake for 55 minutes. 7: Let cool; store in an airtight container for 10 days or in a ziplock bag in the freezer for 2+ weeks.View original recipe
