tbsp olive oil

bunch spinach

tbsp butter

tsp pepper

Instructions
1: Heat 3 tablespoons of olive oil in a frying pan. 2: Once hot, turn down the heat and cook 4 minced garlic cloves for 1 minute, stirring to prevent burning. 3: Add 3 cups of chopped cherry tomatoes, 1 teaspoon of salt, pepper, Italian seasoning, and chili flakes (optional). 4: Cook while stirring until a sauce forms, approximately 8 minutes. If it's too thick, add a splash of broth. 5: Add the cooked gnocchi to the pan, along with 1 tablespoon of vegan butter or real butter, and stir in spinach. 6: Top with goat cheese and serve with a fresh ciabatta bun.View original recipe
