Instructions
1: Preheat oven to 425°F. 2: Cut off the top of the garlic bulb, place it on a piece of tin foil, drizzle with olive oil & close tightly. 3: Roast for 40 minutes. 4: Peel & roughly chop potatoes; wash & trim cauliflower. 5: Bring a large pot of water to a boil; add veggies & let boil for 30 minutes. 6: Drain water, add butter, mayo, salt, pepper & squeeze out roasted garlic from bulb. 7: Mash & mix until creamy smooth (option to use a hand mixer for ideal smoothness). 8: Sprinkle with parsley or chives and enjoy!View original recipe
