1: Peel and cube a handful of beets (golden or red or both). 2: Toss beets in EVOO, season with salt and pepper, and roast at 375°F for 35 minutes. 3: Chop and massage kale with oil and sea salt. 4: Pat dry the salmon, season with salt and pepper. 5: Heat EVOO in a pan and start pan-frying the salmon skin side up for 4-5 minutes. 6: Flip the salmon and cook for another 4-5 minutes until opaque throughout. 7: Assemble the salad on a bed of kale, add roasted beets, top with feta, and squeeze fresh lemon juice over it.View original recipe
