Delicious chickpea stuffed sweet potatoes, perfect for Meatless Monday. These sweet potatoes are baked and filled with sautéed chickpeas and veggies, mixed with a tasty sweet and spicy BBQ sauce. Finished off with melted cheese and green onions, this dish is both nutritious and satisfying.

Instructions
1: Preheat oven to 400°F. 2: Scrub sweet potatoes, rub with oil & season with salt; poke holes & bake for 1 hour. 3: Sauté onions & peppers in oil for 4 minutes; add rinsed/drained chickpeas. 4: After 5 minutes, add BBQ sauce & let simmer for a few minutes, adding water or veg broth if mixture is too thick. 5: Carefully slice sweet potatoes open & stuff them with the chickpea mixture. 6: Sprinkle with cheese & return to the oven for 5 minutes until cheese has melted. 7: Sprinkle with diced green onions before serving.View original recipe
