What you need

broccoli

yellow onion
cup broth

tsp salt

slice bacon

tsp pepper

cup carrot

clove garlic clove

oz extra sharp cheddar cheese

Instructions
1: Prep all your vegetables: peel & dice potatoes, dice onion and garlic, dice broccoli & shred carrot. 2: Cook bacon until crispy & set aside. 3: Add olive oil to a large pot & add onion & garlic, a pinch of salt & cook for 4 minutes. 4: Add potatoes & 2 cups of broth, cover & bring to a boil, simmer for 15 minutes. 5: Using a blender, blend soup until smooth. 6: Add carrots, broccoli & remainder of broth, let simmer for another 10 minutes. 7: Stir in cheese & serve with crumbled bacon & green onion.View original recipe
