1: Scrub and wash the sweet potatoes, then pierce them with a fork. 2: Place the sweet potatoes into the instant pot on the trivet or in a steam basket with 1 cup of water at the bottom. 3: Pressure cook the sweet potatoes for 16 minutes, then naturally release for 10 minutes. 4: Remove the sweet potatoes and let them cool. 5: Add the chicken breasts and 1 cup of BBQ sauce to the instant pot and pressure cook for 10 minutes, then naturally release for 10 minutes. 6: Shred the chicken and toss it with the juices. 7: Cut the sweet potatoes lengthwise and mash the sides with a fork. 8: Stuff the sweet potatoes with the shredded chicken and top with pickled jalapeños, cilantro, and optional cheese.View original recipe
