These BBQ chicken and pineapple quesadillas are a delicious combination of slightly spicy BBQ sauce and sweet, fresh pineapple. Ideal for a quick meal, they are filled with marinated chicken, bell peppers, jalapeños, and plenty of cheese, all grilled to perfection.

1 bell pepper

½ cup bbq sauce

1 chicken breast

Instructions

1: Marinate chicken in BBQ sauce for an hour; grill on the BBQ until cooked through; let cool & dice.

2: Slice bell pepper, jalapeño (option to sauté them for 4 mins in a skillet), & pineapple.

3: Spread cheese on half a tortilla, top with chicken, peppers & pineapple; top with more cheese & fold.

4: Heat a skillet, add folded quesadilla (option to sprinkle top with paprika) & cook on both sides for 3 mins until cheese has melted.

5: Cut into 3 parts & serve with salsa.
