Instructions
1: Pat dry fish with a paper towel. 2: Generously season with salt, pepper & Herbs du Provence. 3: Coat fish with flour. 4: Fry on medium-high heat with avocado oil for 3 minutes per side. 5: Place into a baking dish and set aside. 6: Preheat oven to 350°F. 7: Sauté onion for 4 minutes with a sprinkle of salt. 8: Add carrot & continue to cook for another 4 minutes. 9: Add garlic, tomato sauce & water. 10: Let simmer for 6-8 minutes until it thickens. 11: Spread veggie mixture over fish. 12: Bake at 350°F for 20 minutes covered, then uncover & broil for 1 minute.View original recipe
