Asparagus Feta Egg Tortilla

A delicious spring breakfast featuring asparagus, feta, and eggs wrapped in a tortilla. This recipe is quick and easy, perfect for incorporating fresh asparagus into your meals.

Instructions
1: Snap off the end of the asparagus & then chop them up along with the red pepper. 2: Whisk together eggs. 3: Heat a small skillet over medium heat & add oil. 4: Once the pan has warmed up, add the asparagus & pepper, season with a sprinkle of salt and pepper. Sauté for 4 mins mixing it around a couple times. 5: Pour in the eggs & twirl the pan to ensure they coat the pan. Let cook for 1 min until eggs are almost set. 6: Place tortilla shell on top. 7: Carefully, using a spatula, slide it under the egg mixture as best as you can and FLIP. 8: Top one side with feta or cheese of choice. 9: Fold in half, press down and let both sides get crispy. 10: Remove from heat, cut in half & enjoy.View original recipe
