A super flavourful, fresh chicken bowl that's quick to assemble and perfect for lunch. This recipe features rotisserie chicken, fresh vegetables, and creamy tzatziki to make a deliciously healthy meal.

1: Cook chicken: add 2 chicken breasts to a small pot. Top with water or broth until covered. Bring to a boil & simmer for 25 minutes. Shred & set aside (or use rotisserie chicken!). 2: Dice tomatoes, cucumbers, red onion & olives. 3: Assemble bowls starting with greens, chicken, veggies, feta. Drizzle with olive oil & add a big dollop of tzatziki.
