Potato pancakes, also known as latkes, are an easy and cost-effective dinner idea. They are delicious and can be served alongside roasted Brussels sprouts. A nostalgic dish that tastes great while still being simple to prepare.

1: Preheat oven to 400°F. 2: Wash, trim and halve Brussels sprouts; toss in olive oil, salt & pepper; bake for 25 minutes cut side down. 3: Peel and shred potatoes. 4: Peel and shred onion. 5: Squeeze excess water from both. 6: Combine and stir in the egg, salt & pepper (option to add a dash of chili flakes). 7: Heat avocado oil in a large frying pan. 8: Using your hands, squeeze out extra liquid and fry each pancake for approximately 4 minutes per side. 9: Continue until all batter is used up, adding more oil as needed. 10: Serve with Greek yogurt or spicy mayo.
