Delicious lentil taco bowls packed with protein and flavor. Rinse red lentils and cook, then sauté onion, bell peppers, and garlic. Mix in cooked lentils with chili seasoning and serve over kale with corn, avocado, jalapeños, cherry tomatoes, and salsa.

1: Rinse red lentils. 2: Bring lentils and water to a boil. 3: Simmer for 10 minutes, then drain. 4: Sauté chopped onion, diced bell peppers, and garlic cloves in EVOO until soft. 5: Add cooked lentils and chili seasoning, then cook and stir for 2 more minutes. 6: Serve over massaged kale with corn, avocado, jalapeños, cherry tomatoes, and salsa.
