1: Cook quinoa as per package instructions. 2: Cook chicken (I air fried mine tossed in chili lime seasoning) & dice. 3: Rinse beans and corn. 4: Sauté corn in a drizzle of oil until it’s charred (this step is optional just adds more flavour). 5: Whisk together dressing ingredients. 6: In a large bowl combine quinoa, beans, corn, pepper, onion & jalapeño. 7: Add chicken & toss well with dressing. 8: Store in the fridge for up to 4 days.
