1: Cook chicken & dice or shred (or use rotisserie to skip this step). 2: Bring a small pot of water to a boil, add eggs & set timer for 9 minutes. When done, transfer eggs to a bowl with ice and water, let sit for 5 minutes. 3: Chop your cucumber, green onion, avocado & mango. 4: Peel eggs. 5: Assemble salads with arugula, cucumber, green onion, avocado, eggs, chicken & feta, drizzle with dressing and dig in.
