These shrimp poke bowls are comforting, flavourful, and ready in under 30 minutes. They're fun for the whole family, packed with fresh veggies for extra crunch, topped with a delicious spicy mayo, and perfect for anyone's dinner ideas.

1: Defrost shrimp. 2: Pat them dry really well with a paper towel. Add to a small bowl with spices & olive oil & let sit for 10 mins. 3: Meanwhile cook rice & dice veggies. 4: Heat a large skillet on medium heat, once hot add a splash of oil & add shrimp. 5: Spread them apart (you may need to do this in batches) and cook for 3 minutes, flip & cook for another 2 minutes. Remove from heat. 6: Whisk together mayo and hot sauce or chili oil. 7: Assemble bowls with rice, shrimp, edamame, vegetables & drizzle with mayo + add a splash of soy sauce.
