These delicious pumpkin pie bites are simple and quick to make, featuring a flaky dough and a flavorful pumpkin filling. 1: For the dough, add dry ingredients (flour, coconut sugar, sea salt) to your food processor and pulse. 2: Slice a stick of butter (ice cold) and pulse it into the dry mixture until well combined. 3: Add ice water (start with 4 tbsp) and pulse until a dough ball forms. 4: For the filling, whisk together the pumpkin purée, almond milk, maple syrup, vanilla, oil, arrowroot flour or cornstarch, and pumpkin pie spice. 5: Preheat your oven to 350°F (175°C). 6: Roll out your dough on a floured surface and cut out rounds using a cookie cutter or glass (2-3 inches). 7: Grease a mini muffin tin and fill with the cut out dough. 8: Scoop 1 tbsp of filling into each dough cup. 9: Bake for 18 minutes. 10: Let cool and top with whipped cream right before serving.
